Lime, Cilantro, and Coconut Jazzmen Brown Rice
A perfect way to brighten up a side of rice. Serve this Caribbean inspired rice with grilled chicken, fish, or even a pot of braised ox tails and pigeon peas.
2 cups of Jazzmen Brown Rice
1 can of coconut milk
1 2/3 cups of water
one lime, zested
crushed red pepper
Combine Jazzmen rice, coconut milk, and water in a saucepan. Season generously with salt.
Bring to a simmer, put the lid on and lower to medium/low heat.
Cook for Approximately 15-20 min, or until liquid is fully absorbed.
Remove from the heat and let sit for 10 min. Remove lid and fluff rice.
Mix in lime zest and chopped cilantro.
Serve with a sprinkle of crushed red pepper.
